Two weeks ago I decided to make a major, life changing choice. I chose to become a vegan. It wasn’t a decision I took lightly, and I intend to completely pour my heart out about my decision sometime within the next few days. But for today, I just want to share one of the more amazing animal free recipes I’ve tried since making the change.
Today we craved pancakes. Unfortunately for me, all of the boxed pancake mixes in our possession have dried milk in them, so that was a no-go for me! I could have easily found a lovely vegan recipe for myself, and just made Chris the boxed one to “get rid” of it. But I was really eager to try to find a pancake batter we could have together in the future, that would satisfy us both.
As usual, I did some heavy duty googling, and came across this little gem! The texture is a little different, but I am pretty much banana obsessed, so I was in heaven! I would eat these bad boys even if I weren’t vegan!! I would recommend them to anyone, and everyone, and possibly even their cats. No joke, Spunky kitty was literally sitting by the stove meowing at me, and sniffing the air.
1 cup unbleached flour
2 tsp baking powder
1 ripe banana, mashed
1 1/4 cup milk (I used almond milk)
1 tbsp sugar
1. Mix the flour, sugar, and baking powder in large bowl.
2. In a small bowl, mash the banana with milk until the lumps are reduced.
3. Add banana mixture to dry ingredients, blend until smooth.
4. Cook them, butter them, and smother them with syrup.
