I’ve spent so much time dreading fall that I’ve kind of let my favorite thing about it fall by the wayside. Even though I’m not prepared for the impending
doom cold weather, I definitely want to partake in the most delicious seasonal vegetable this world has to offer, the pumpkin! So it’s time to get started! Here I will make a little list of all the recipes I want to try out this fall. Let me know if you know of any that I simply must try so I can add them!

Before going vegan, I had never heard of tempeh. Even after going vegan, I didn’t really pay it much attention. I’ve always been kind of wary of meat substitutes in general. They rarely are a close enough mimic to be worth all the trouble. Not to mention that most meat substitutes are quite highly priced. But I began trying them every now and again, making a conscious effort to keep an open mind. In most cases, my original feelings on them rang true. It’s probably the easiest, most rewarding experience of my life, no joke. I mean, imagine… A pizza you can control every ingredient of. A pizza where you don’t have to pay $1.25 a piece for stingy servings of toppings. A pizza where you know if the cook picked their boogers, and didn’t wash their hands after. (more…)
Okay, so I’ve admitted that I am a food addict, right? So I think it’s safe to say that going vegan is probably just about the hardest thing I have ever done. I have to rethink every food craving I have, and find a way to make it fit into the guidelines I have created for myself. There are some things that are completely out of the question for me, like milk chocolate. I just want to eat some damn milk chocolate people! Dark chocolate is good, but it just isn’t for me. Two weeks ago I decided to make a major, life changing choice. I chose to become a vegan. It wasn’t a decision I took lightly, and I intend to completely pour my heart out about my decision sometime within the next few days. But for today, I just want to share one of the more amazing animal free recipes I’ve tried since making the change.
Today we craved pancakes. Unfortunately for me, all of the boxed pancake mixes in our possession have dried milk in them, so that was a no-go for me! I could have easily found a lovely vegan recipe for myself, and just made Chris the boxed one to “get rid” of it. For this brand spanking new year, I am trying my best to make changes to my diet and health. One of the big changes I am making is incorporating more vegetables into my diet. There are certain veggies, I just don’t care for! One of those is zucchini. But I think it is important to try to get myself used to eating things I don’t like, for their health benefits. So I have found the perfect recipe to break me in easy. This recipe has lots of tasty stuff, that should distract me from the yucky squash.
I had never been huge on shrimp. I tried it a few times before, and honestly, the texture kind of grossed me out. It never occurred to me to try it again, but I am glad I did Thursday night, because it turns out I just hadn’t had it done right! The shrimp was delicious! So now I can’t wait to get my hands on some, and see what I can do with it. I thought I would give you guys a peek into the recipe I intend to try first. I thought I would share yet another of the recipes I made on Thanksgiving. Okay, this is a lie, I delegated this one to Chris. I was swamped with the 85 other dishes I was making, and to be honest, he totally rocked it. I know it’s annoying, and I might as well just break down and make this a food blog, as much as I go on about it. But I kind of just like to show off all the yumminess I get to experience. I am a firm believer in doing as much from scratch as I can bear to. I am slowly learning, that there isn’t much more effort involved, and the pay off is definitely worth it. The taste of something made completely from scratch, something in which you know every single ingredient, is far superior to a frozencannedpreservativepackedstorebought whatever. Am I right? So this year I made our Thanksgiving pumpkin pie 100% from scratch. All the way down to roasting my own sugar pumpkin for the puree. It turned out so amazing! I know Thanksgiving has already passed, but I figure you can file this away for next year’s feast! (more…)
My mind is blown! In this whole “eating better” quest, I’ve come to realize that a lot of the things we eat on a daily basis are completely loaded with preservatives and junk. It’s sort of disconcerting when you look at the ingredients on a package, and you can’t even pronounce half of them! But what’s the solution? You can’t just stop eating! So I’ve made it a personal goal to start making more things from scratch. (more…)
I just wanted to share the recipe I’m trying out tomorrow night! We stocked up on some chicken legs a few months back, and we just got a fresh new butternut squash, since we had so much fun with the last one. It looks great! And what’s funny, is that it was really my only option when I keyed my two ingredients into Allrecipes. I can’t wait to try it out, I’ll let you guys know how it goes!! (more…)
